WhatsApp lets you export a chat, but what you get isn't a document you can print as is. Here are your options.
WhatsApp's built-in export
In the chat, tap the contact's name, then "Export Chat". You get a .txt file (plus the media if you include them), sent by email or saved to Files.
Limitations: a plain text file with no layout, media dumped in a pile, and a size limit for very long chats.
WhatsApp backups (iCloud)
The WhatsApp backup in iCloud is there to restore WhatsApp on a new iPhone. You can't read it from a computer.
